Text Box: 	People ask me all the time, “How did you ever get into making chocolates?”, and the answer is something that goes back to my childhood.  Some of my favorite memories of my maternal grandfather are all about chocolate!  He truly was a chocoholic!  He had to have chocolate cream pie every morning for breakfast.  Whenever he came to visit us, he always brought each of his grandkids a 1 lb. bag of chocolate candies, and my mother was never allowed to take them away from us.  Papa was all about food, and fun!  He is my muse, I guess you could say.  He taught me that life should be sweet, in every way possible, but especially with chocolate!  I started my own chocolate journey when I began studying under a Master Chocolatier, who taught me the ins & outs of chocolate, including many of the “old world” techniques, like hand tempering, chocolate’s chemistry, and it’s history.  I received my certification as a Professional Chocolatier in November 2003.  I have spent the last 6 years applying, not only what I learned at school, but the life lessons learned by Papa long ago.  Each chocolate that we create is a journey in and of itself.  We use the freshest ingredients available.  We make our truffles, and other confections using Wilbur brand chocolate.  I hope that you enjoy eating our chocolates as much as we love making them for you.
